Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Remove the gills from the oysters and set aside.

  3. In a bowl, combine the grated stale bread, salt, pepper, and mixed spice.

  4. Butter a large round dish and line the sides and edge with rich pastry, leaving the bottom unlined.

Assemble and bake

  1. Layer the oysters and hard-boiled egg yolks in the dish, then sprinkle the bread mixture on top.

  2. Cover with a pastry lid and bake until golden brown.

What each ingredient does

Oysters
Form the main filling and contribute their briny, savoury flavour.
Hard-boiled egg yolks
Add richness and a creamy texture to the filling.
Stale bread
Absorbs moisture from the filling and helps give the topping body.
Rich pastry
Forms the crust that encloses the filling and browns in the oven.

The step that matters

Covering with the pastry lid and baking until golden brown. The lid must seal the edges of the lined dish so steam and juices stay in while the filling cooks through. Baking until golden brown shows the pastry has set and browned, but the filling needs enough time to cook fully.

Swap the mace

How well each one fits the dish's main ingredients (oyster, egg, bread, pepper, nutmeg, cinnamon, butter):

  1. Clovefits better
  2. Allspicefits better
  3. Parsleyfits better
  4. Macethe original

Fit is the average pairing score against oyster, egg, bread, pepper, nutmeg, cinnamon, butter. Candidates are from the same food group and used in at least 100 recipes.
