A-LA-mode Beef

Ingredients

Directions

  1. Remove the bone from the beef and secure the opening with skewers. Tie the meat with kitchen twine.

  2. Rub the beef all over with salt.

  3. Chop the marrow and suet together. Pound the spices and chop the pot herbs finely.

  4. Pick the leaves from the sweet marjoram and basil, then rub them to a powder. You need at least 4 tablespoons of each.

  5. Mix the spices, salt, and herbs together.

  6. Cut the bacon or pork into pieces about ¼ inch thick and 2 inches long.

  7. Make deep incisions in the beef, close together. Fill each hole with seasoning, then insert a piece of bacon, pressing it down and covering with more seasoning.

  8. Pour a little wine into each hole.

  9. Repeat the stuffing process on the other side of the beef.
