What each ingredient does

Cling-stone peaches
Provide the main fruit flavour, aroma, and body of the cordial.
Double-rectified whisky
Extracts flavour from the fruit and stones and preserves the cordial.
Rock-sugar candy
Adds sweetness and rounds out the bitterness from the stones and kernels.

The step that matters

Cork tightly and set aside for three months. A tight seal keeps alcohol from evaporating and limits air getting in, so flavour extracts slowly and evenly over the long steep.
