Corn Omelet

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the batter

  1. Beat the yolks until thick and light.

  2. Add salt, pepper, sugar, corn, and hot water; mix well.

  3. Whip the egg whites until stiff, then gently fold them into the yolk mixture.

Cook and serve

  1. Melt butter in a skillet, tilting to coat the sides.

  2. Pour in the mixture and spread evenly.

  3. Cook for 10 minutes on the stovetop, then finish in a 350°F (175°C) oven.

  4. Fold the omelet and serve on a hot platter.

What each ingredient does

Eggs
Whipped whites give the omelette its light, airy structure, while yolks add richness and set the body.
Corn
Adds sweetness and moist, tender pieces throughout the omelette.
Butter
Coats the skillet to prevent sticking and adds richness and browning on the surface.
Sugar
Adds a little sweetness that balances the salt and browns lightly in the pan.

The step that matters

Folding in the whites. Whipped egg whites hold air that gives lift. Stirring them in vigorously deflates the foam, so fold gently with a spatula until just combined to keep the omelette light.
