Tomatoes Stuffed with Stuccotash
Ingredients
Directions
The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Prepare the tomatoes
Wash and wipe the tomatoes, then remove a thin slice from the stem end.
Scoop out the inside of the tomatoes and sprinkle with coarse sea salt.
Invert the tomatoes and let them stand for 30 minutes.
Stuff and bake
Mix the tomato pulp with the succotash and stuff the tomatoes.
Arrange the stuffed tomatoes in a well-buttered granite dripping pan.
Sprinkle the tops with buttered cracker crumbs.
Bake at 400°F (200°C) for 20 minutes or until tender.
Baste with melted butter before serving.

What each ingredient does
- Tomatoes
- Serve as the hollow shell that holds the filling and softens as it bakes.
- Succotash
- Provides the bulk of the stuffing, adding body and savory filling to the tomatoes.
- Butter
- Adds richness and helps the cracker crumbs brown on top.
- Buttered cracker crumbs
- Form a crisp, golden topping that contrasts with the soft tomato.
The step that matters
Inverting the tomatoes to drain. Standing the salted tomatoes upside down for 30 minutes lets excess juice drain out. Without this, extra liquid can dilute the filling and make the stuffed tomatoes watery as they bake.
