Why it works: Corn and milk are a kitchen classic. They rank in the top 10% of all ingredient pairs, and cooks put them together in 6,955 recipes. Both carry hexanal, which smells green, grassy. The science ↓
Corn Custard
Ingredients
Directions
The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.
Prepare
Preheat the oven to 350°F (175°C).
In a bowl, beat the eggs slightly and add the sugar, pepper, onion juice, and salt.
Slowly pour in the scalded milk while continuing to beat the mixture.
Add the corn and mix well.
Bake and serve
Pour the mixture into a buttered baking dish set in a pan of hot water.
Bake for 20 to 25 minutes, stirring once while cooking to prevent the corn from settling.
Turn out onto a serving platter and serve surrounded by broiled tomatoes.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Eggs
- Set when heated, giving the custard its firm, sliceable structure.
- Milk
- Provides liquid and richness, creating a tender, creamy custard texture.
- Corn
- Adds body, sweetness, and flavour to the custard base.
The step that matters
Baking in a water bath. Setting the dish in hot water moderates the heat around the custard, so the eggs set gently. Without this, the edges can overcook and turn rough or curdled before the centre sets.
Swap the onion
How well each one fits the dish's main ingredients (corn, sugar, pepper, egg, milk):
- Capsicumfits better
- Potatofits better
- Sweet potatofits better

Fit is the average pairing score against corn, sugar, pepper, egg, milk. Candidates are from the same food group and used in at least 100 recipes.
