Cornstarch Cake

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Cream the butter in a mixing bowl using a wooden spoon.

  2. Gradually add the sugar.

  3. Sift the corn starch, flour, salt, and baking powder together twice.

  4. Add the dry mixture alternately with the milk to the butter mixture.

  5. Gently fold in the stiffly beaten egg whites and add the vanilla extract.

  6. Pour the mixture into two buttered and floured brick-shaped bread pans.

  7. Bake for 45 minutes in a 350°F (175°C) oven.
