Roast Chicken

Ingredients

Directions

  1. Choose a tender chicken by checking the softness of the breastbone cartilage.

  2. Have the chicken carefully picked and singed.

  3. If undrawn, wipe it with a wet towel and draw it carefully without breaking the intestines.

  4. If drawn, wash it if necessary, but note that washing may remove flavor.

  5. Cut the skin at the back of the neck and remove the crop, then cut off the neck close to the body.
