Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ground beef
Provides the main meaty filling and savory flavor once stewed until tender.
Cornmeal
Thickens the meat filling and forms the mushy cornmeal layers that set as the pie bakes.
Raisins
Add sweetness that balances the savory meat and peppers.
Shortening
Adds fat that gives the cornmeal layer a softer, richer texture.

The step that matters

Cooking the cornmeal mixture to a mushy consistency. Cornmeal stirred into boiling water must cook long enough for its starch to gelatinize; if undercooked it stays gritty and will not set into a sliceable layer.

Swap the raisin

How well each one fits the dish's main ingredients (beef, olive, pepper, butter):

  1. Lemonfits better
  2. Avocadofits better
  3. Mangofits better
  4. Raisinthe original

Fit is the average pairing score against beef, olive, pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
