What each ingredient does

Spinach
Forms the main body of the mould, giving bulk and a soft, tender texture once cooked and chopped.
Baking soda
Raises the water's alkalinity during cooking, which helps the spinach keep a bright green color.
Butter
Adds fat and richness, carrying flavor and smoothing the texture of the chopped spinach.
Hard-boiled eggs
Add protein-based richness and a firm, contrasting texture around the soft spinach mould.

The step that matters

Drain the spinach thoroughly and finely chop it. Cooked spinach holds a lot of water. If it stays wet, the mould will be loose and watery and may not hold its shape when turned out.
