The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a firm, wobbly jelly as it cools.
Egg
Beaten into the mixture, it adds richness and body to the jelly.
Orange juice
Provides the main flavour and acidity of the jelly.
Lump sugar
Sweetens the jelly and adds flavour from the orange rind.

The step that matters

Pour the cooled gelatine onto the egg while stirring briskly. If the gelatine is still hot, it can scramble the egg. Cooling it first and stirring constantly keeps the egg smooth and evenly blended into the jelly.

Swap the orange

How well each one fits the dish's main ingredients (sugar, egg):

  1. Vanillafits better
  2. Raisinfits better
  3. Lemonfits better
  4. Orangethe original

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
