Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Sweetens the sorbet and, dissolved in water, lowers the freezing point so it stays scoopable.
Grated pineapple
Provides the main pineapple flavor and acidity, along with the fruit's body.
Heavy cream
Adds fat and whipped air, giving the frozen sorbet a light, creamy texture.

The step that matters

Freeze only to a mushy consistency. A partly frozen mixture still has liquid and soft ice crystals, so the folded whipped cream blends in evenly. If it freezes fully, it becomes hard and the cream cannot be folded in smoothly.

Swap the pineapple

How well each one fits the dish's main ingredients (sugar, cream):

  1. Vanillafits better
  2. Strawberryfits better
  3. Raspberryfits better

Fit is the average pairing score against sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
