Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Boil macaroni in equal parts milk and water until tender.

  2. Drain the macaroni in a sieve.

  3. Sprinkle a little coarse sea salt over the macaroni.

  4. Layer the macaroni in a baking dish with grated cheese, butter, pepper, and mustard until the dish is full.

  5. Bake in a 400°F (200°C) oven for 20 to 30 minutes.
