What each ingredient does

Bread
Forms the base that soaks up and holds the warm molasses syrup.
West india molasses
Provides the dominant sweetness, deep flavour, and sticky moisture of the topping.
Ground ginger
Adds a warm, spicy aroma that balances the sweetness of the molasses.
Hot water
Thins the molasses so it spreads evenly and soaks into the toast.

The step that matters

Cover the toast for a few minutes. Trapped steam keeps the surface warm and loosens the syrup so it soaks into the bread instead of pooling on top.

Swap the ginger

How well each one fits the dish's main ingredients (bread, molasses):

  1. Cinnamonfits better
  2. Clovefits better
  3. Allspicefits about as well
