What each ingredient does

Buttermilk
Provides acidity and moisture, giving the batter tang and a tender crumb.
Cornmeal
Forms the body of the batter and gives the bread its characteristic grainy structure.
Baking soda
Reacts with the acidic buttermilk to produce gas that helps the bread rise.
