Potato Bread

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the potatoes

  1. Boil the potatoes thoroughly and mash them until fine.

  2. Add the salt and butter to the mashed potatoes.

Make and bake the dough

  1. Rub in twice the quantity of flour.

  2. Stir in the yeast and moisten with lukewarm water or milk until the mixture is stiff enough to mold.

  3. Let the dough rise until doubled in size, then bake immediately at 400°F (200°C) until golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mealy potatoes
Their starch and low moisture give the bread a soft, tender crumb.
All-purpose flour
Its proteins form gluten, giving the dough structure to hold rising gas.
Active dry yeast
Produces carbon dioxide as it ferments, making the dough rise and become airy.
Butter
Adds fat that softens the crumb and contributes richness and browning.

The step that matters

Letting the dough rise until doubled. Yeast needs time to produce enough gas for a light texture. Underproofed dough bakes dense, while overproofed dough may collapse. Judge by size, not just the clock.

Swap the potato

How well each one fits the dish's main ingredients (butter, flour, milk):

  1. Potatothe original
  2. Arrowrootfits about as well
  3. Leekfits less well
  4. Shallotfits less well

Fit is the average pairing score against butter, flour, milk. Candidates are from the same food group and used in at least 100 recipes.
