Indian Bread
Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Mix Indian meal and cold water to form a thick gruel.
Stir the mixture into boiling water and let it boil for 30 minutes.
Add a little coarse sea salt and remove from heat.
Let the mixture cool until lukewarm, then stir in yeast and more Indian meal to achieve a dough-like consistency.
Once the dough is light, transfer it to buttered pans.
Let it rest for a few minutes, then bake at 350°F (175°C) for about 2 hours.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
