Ingredients

Directions

Prepare the custard

  1. Dissolve the isinglass in the sweet milk.

  2. In a bowl, combine the rich cream and powdered sugar until very sweet.

  3. Flavor the mixture with vanilla or rose essence.

  4. Beat the egg whites until very light.

  5. Stir the dissolved isinglass into the sweetened and flavored cream.

  6. Set the bowl in a tub of ice and stir until it thickens.

  7. Gently fold in the beaten egg whites.

Line and set

  1. Line a mold with sponge cake and pour the mixture into it.

  2. Use a little isinglass to help the cake stick if needed.

  3. Place the mold on ice and let it set.

  4. To serve, turn the mold upside down and the charlotte will come out.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Gelatin-like setting agent that firms the cream so the charlotte holds its shape when chilled.
Rich cream
Provides fat and body, giving the set dessert a smooth, rich texture.
Egg whites
Beaten to a light foam, they add lightness and airiness to the mixture.
Powdered loaf sugar
Sweetens the cream and adds to its smooth, fine texture.
Sponge cake
Forms the structural lining that gives the charlotte its outer shape and soft texture.

The step that matters

Gently fold in the beaten egg whites. Egg white foam traps air that gives lightness; stirring or folding vigorously deflates it, so the whites must be folded gently into the thickened cream.
