To Preserve Strawberries

Ingredients

Directions

Macerate and simmer

  1. Strew sugar over strawberries and let them sit until they create a syrup.

  2. Simmer the strawberries in a skillet over low heat until they are half to two-thirds cooked.

Spread and cool

  1. Remove from heat and spread strawberries in dishes.

  2. Let them cool in the sun until sufficiently cooled for preservation.

  3. Be careful not to bruise the strawberries while stirring.

What each ingredient does

Strawberries
Provide the fruit, which softens and releases juice as it cooks.
Sugar
Draws water out of the fruit to form a syrup and adds sweetness that helps preserve it.

The step that matters

Simmering to half or two-thirds cooked. Simmering gently softens the fruit while keeping its shape. Overcooking or stirring hard breaks the berries into mush and bruises them, so the syrup thickens unevenly and the texture suffers.
