Why it works: Radish and horseradish share more aroma than cooks usually use. They rank in the top 1% of all ingredient pairs, and cooks put them together in 38 recipes. Both carry coumarin, which smells sweet, hay. The science ↓

Pickled Radish Pods

Ingredients

Directions

  1. Soak the young radish pods in a mixture of salt and water overnight.

  2. Boil the saltwater mixture and pour it over the pods.

  3. Cover the jar tightly to retain steam.

  4. Once the mixture is nearly cool, pour it over the pods again.

  5. Repeat this process until the pods turn green.

  6. Drain the pods in a sieve.

  7. Prepare a pickle with white vinegar, mace, black pepper, and horseradish.

  8. Pour the boiling pickle over the pods.

  9. Seal the jar tightly and store for later use.
