What each ingredient does

Cabbages
Forms the bulk of the pickle and absorbs the vinegar flavour as it rests.
Vinegar
Provides the acidity that sharpens the flavour and helps preserve the cabbage.
Brown sugar
Adds sweetness that balances the sharpness of the vinegar.
Cayenne pepper
Adds heat to the pickling liquid.
Turmeric
Gives the pickle its yellow colour and an earthy, mild flavour.

The step that matters

Boil the cabbage until just pierced, then drain carefully. Cooking too long softens the cabbage's cell walls until it turns mushy, while stopping at the point a straw pierces it keeps some firmness to hold up to the vinegar.
