Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Meat
Provides the main body of the dish, and slow simmering turns its connective tissue tender.
Flour
Thickens the gravy so it coats the back of a spoon.
Milk or water
Forms the liquid base of the gravy, with milk adding richness.

The step that matters

Searing the meat on all sides. A very hot kettle browns the surface through the Maillard reaction, building savory flavor that the long simmer cannot create on its own.

Swap the onion

How well each one fits the dish's main ingredients (meat, milk, flour, celery, thyme, parsley, sage):

  1. Carrotfits better
  2. Parsnipfits better
  3. Shallotfits better
  4. Onionthe original

Fit is the average pairing score against meat, milk, flour, celery, thyme, parsley, sage. Candidates are from the same food group and used in at least 100 recipes.
