What each ingredient does

Flour
Thickens the butter and stock into a smooth sauce as its starch swells when heated.
Butter
Carries fat flavour and helps form the roux with the flour.
Strong reduced stock
Provides the savoury meaty base that gives the sauce its body and flavour.
Canned mushrooms
Add mushroom flavour and soft texture to the finished sauce.

The step that matters

Add the flour to the melted butter and stir well. Flour that is not fully stirred into the fat forms lumps that do not smooth out later. Cooking the flour briefly in the butter also removes raw starch taste and helps the sauce thicken evenly.
