What each ingredient does

Tomatoes
Provide the liquid base and the main tomato flavour of the jelly.
Gelatine
Sets the tomato liquid into a firm, sliceable jelly as it cools.

The step that matters

Dissolve the gelatine fully before setting. Gelatine only sets evenly when it is completely dissolved in warm liquid. Adding the hot juice to the dissolved gelatine helps it disperse, so the jelly avoids lumps, streaks and soft spots.
