Roast Turkey

Ingredients

Directions

The book gives no oven temperature. The 350°F in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Thoroughly pick and clean the turkey, wash it in warm water, then rinse in cold until clear, and wipe inside and out with a soft towel.

  2. Prepare the stuffing by softening the bread crumbs with just enough water, then drain them well.

  3. Stir in the butter, onion or celery (if using), and season with salt, pepper, and sage.

  4. Add the beaten egg and mix thoroughly.

Stuff and roast

  1. Rub the inside of the turkey with salt and fill it with the stuffing, starting with the neck.

  2. Sew up the turkey and tie the legs down at the side.

  3. Rub the turkey with salt and place it on a grate in a large dripping pan.

  4. Pour boiling water into the pan (not over the turkey) and bake in a moderate oven (350°F / 175°C).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Turkey
Forms the main body of the dish, and its meat cooks through during roasting.
Bread crumbs
Absorb moisture and butter, giving the stuffing a soft, bound body.
Egg
Binds the stuffing so it holds together when cut or served.
Butter
Adds fat and richness, carrying flavor through the stuffing.

The step that matters

Pouring boiling water into the pan, not over the turkey. Water in the pan creates steam and keeps the drippings from scorching, while keeping the skin off the water helps it brown rather than turn soggy.

Swap the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (turkey, bread, butter, celery, pepper, sage, egg):

  1. Capsicumfits better
  2. Carrotfits better
  3. Leekfits better
  4. Onionthe original

Fit is the average pairing score against turkey, bread, butter, celery, pepper, sage, egg. Candidates are from the same food group and used in at least 100 recipes.
