What each ingredient does

Young chicken
Provides the main protein, which browns and cooks through under weight and cover.
Butter
Conducts heat for browning the chicken and, once browned, forms the flavorful sauce poured over it.

The step that matters

Browning the underside under weight. Pressing the chicken flat keeps it in even contact with the hot pan, so the skin browns evenly and the meat cooks through at a similar rate. Keeping it covered traps steam that helps the meat stay moist while it cooks.

Swap the parsley

How well each one fits the dish's main ingredients (chicken, butter):

  1. Garlicfits better
  2. Thymefits better
  3. Tarragonfits about as well
  4. Parsleythe original

Fit is the average pairing score against chicken, butter. Candidates are from the same food group and used in at least 100 recipes.
