Cucumber Salad

Ingredients

Directions

  1. Cut a slice off the stem end of each tomato and scoop out the inside, being careful not to break the shell.

  2. Sprinkle the inside of the shells with coarse sea salt and invert to drain.

  3. Mix equal quantities of sliced cucumber, sliced celery, and the firm portion of the tomato pulp.

  4. Fill the tomato shells with the mixture and top with mayonnaise dressing.

  5. Serve on lettuce leaves.
