Roll Butter Pastry

Ingredients

Directions

  1. In a bowl, combine cold water, sweet cream, and egg yolks.

  2. Add just under half of the flour and mix into a smooth dough.

  3. Flour a bread board, turn out the dough, knead quickly, and roll it out thin.

  4. Slice the butter thinly and place it over the dough, then roll it again.

  5. Continue adding butter and flour until fully incorporated, rolling quickly without using warm hands.

  6. Cut the dough with small cutters or in long strips as desired.

  7. Make tarts or turnovers using jelly, chopped cooked prunes, or cranberry jam.

  8. Roll the dough to a thickness of ¼ inch, wash with water, and sprinkle with sugar.
