Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the prunes

  1. Stew the prunes in as little water as possible until very tender.

  2. Once cooled, remove the pits and chop the prunes very fine.

Make the pudding

  1. Beat the egg whites until stiff, then mix in the sugar.

  2. Combine the chopped prunes with the egg mixture and mix well.

  3. Turn the mixture into a buttered dish and bake at 350°F (175°C) for 30 minutes.

  4. Serve with sweet cream.

What each ingredient does

Prunes
Provide the main fruit flavour and body, softened by stewing and chopped fine.
Egg whites
Beaten until stiff, they give the pudding its light, airy structure as it bakes.
Sugar
Sweetens the pudding and helps stabilise the beaten egg whites.

The step that matters

Beating the egg whites until stiff. Egg whites must be beaten to stiff peaks before the sugar is mixed in. Underbeaten whites will not trap enough air, so the pudding may be dense rather than light after baking.
