Strawberry Meringue

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the base

  1. Prepare puff paste and roll it out to the size of a dinner plate.

  2. Bake the puff paste in a 400°F (200°C) oven until light brown.

Top and bake

  1. Remove from the oven and layer the strawberries over the baked paste, sprinkling them with sugar.

  2. In a bowl, whip the egg whites until stiff peaks form, then gradually add the powdered sugar.

  3. Spread the meringue over the strawberries, about an inch thick.

  4. Return to the oven and bake until the meringue is lightly browned.

Serve

  1. Serve fresh, but do not serve hot.

What each ingredient does

Egg whites
Whipped into stiff peaks to form the airy, sweet meringue topping.
Strawberries
Provide fruit flavor and moisture beneath the meringue.
Sugar
Sweetens the strawberries and draws out their juices.
Powdered sugar
Dissolves easily into the whipped whites, sweetening and stabilizing the meringue.
Puff paste
Forms the crisp, flaky base that holds the toppings.

The step that matters

Whipping the egg whites. Whites must reach stiff peaks without deflating, and sugar should be added gradually so it dissolves fully. Under-whipped or greasy whites will not hold their shape or brown evenly in the oven.
