Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a wobbly, sliceable structure as it cools.
Milk
Forms the creamy base and adds richness and body.
Egg yolks
Thicken the base and add richness and a smooth texture.
Egg whites
Fold in to add lightness and an airy texture.
Sugar
Sweetens the dish and balances the eggs and milk.

The step that matters

Cooking the egg yolk mixture. Egg yolks thicken as they heat, but if the mixture gets too hot or boils hard it can curdle and turn grainy. Gentle, steady cooking keeps it smooth.
