Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatin
Sets the juice into a firm, wobbly structure as it cools.
Egg whites
Whipped into foam, they lighten the mixture and give the sponge its airy texture.
Sugar
Sweetens the juice and balances the tartness of the pineapple.

The step that matters

Beating the egg whites. Whites must be beaten to a stiff foam while the mixture is only slightly cooled. If too hot, the foam can collapse, and if too cool it may not fold in smoothly. Folding gently preserves the trapped air that gives the sponge its lightness.

Swap the pineapple

How well each one fits the dish's main ingredients (gelatin, sugar, egg, cream):

  1. Vanillafits better
  2. Strawberryfits better
  3. Raisinfits about as well
  4. Pineapplethe original

Fit is the average pairing score against gelatin, sugar, egg, cream. Candidates are from the same food group and used in at least 100 recipes.
