What each ingredient does

Gelatine
Forms the gel that sets the jelly into a firm, sliceable texture.
Pineapple juice
Provides the main fruit flavour and liquid base for the jelly.
White wine
Adds acidity and aroma to the jelly, balancing the sweetness.
Sugar
Adds sweetness and balances the tartness of the juice and wine.

The step that matters

Dissolve the gelatine fully in the boiling water. Gelatine must be completely dissolved before the juice is added; undissolved granules leave gritty spots and weaken the set, so stir until no grains remain.

Swap the pineapple

How well each one fits the dish's main ingredients (white wine, sugar):

  1. Vanillafits better
  2. Applefits better
  3. Plumfits about as well

Fit is the average pairing score against white wine, sugar. Candidates are from the same food group and used in at least 100 recipes.
