Orange Filling

Ingredients

Directions

Prepare the oranges

  1. Grate the yellow rind from the oranges and set aside.

  2. Peel the oranges, discard all white rind, and cut them into small pieces, removing the center pith and seeds.

Make the filling

  1. Place the orange pieces in a bowl set over boiling water.

  2. Stir in the flour mixed with water to form a smooth paste.

  3. If the paste is too stiff, add a little more water.

  4. Stir constantly until thickened.

  5. Beat the yolk of the egg with the sugar until creamy.

  6. Stir the creamy yolk mixture into the orange mixture and cook for 2-3 minutes.

  7. Remove from heat.

  8. Add lemon juice if not tart enough.

Frost and finish

  1. Frost with a yellow frosting made by mixing pulverized sugar into the beaten yolk of an egg.

  2. Or use a boiled frosting with the yolk instead of the egg white.

  3. Flavor with the remaining grated peel.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oranges
Supply the bright citrus flavor and the juicy pieces that make up the filling.
Flour
Thickens the orange mixture into a smooth paste as it cooks.
Egg yolk
Enriches the filling and adds richness and colour to the mixture.
Sugar
Sweetens the filling and balances the citrus tartness.

The step that matters

Stir constantly until thickened. Flour thickens only as its starch heats in liquid; if stirring stops, lumps and scorching can form, leaving the filling grainy or uneven. Stirring keeps heat even.

Swap the orange

How well each one fits the dish's main ingredients (flour, sugar, egg):

  1. Raisinfits better
  2. Vanillafits better
  3. Lemonfits better
  4. Orangethe original

Fit is the average pairing score against flour, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
