What each ingredient does

Gelatin
Sets the liquid sugar mixture into a soft, elastic marshmallow structure.
Granulated sugar
Adds sweetness and bulk, and helps give the filling its body.

The step that matters

Beat with a fork for 30 minutes. Beating whips air into the syrupy mixture and cools it so it thickens into a light, stable foam. Stopping early leaves a dense, runny filling that will not set properly.

Swap the banana

How well each one fits the dish's main ingredients (sugar, butter):

  1. Vanillafits better
  2. Figfits about as well
  3. Peachfits about as well
  4. Bananathe original

Fit is the average pairing score against sugar, butter. Candidates are from the same food group and used in at least 100 recipes.
