Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pineapple
Provides the main fruit flavour and a bright acidity that cuts the sweetness.
Gelatin
Gives the sherbet body and a smoother texture by limiting large ice crystals.
Sugar
Adds sweetness and softens the frozen texture so it is less hard.

The step that matters

Dissolve the gelatin fully. Gelatin must be completely dissolved in the hot water before it is stirred in. Undissolved gelatin forms rubbery specks and lumps, and it sets unevenly in the frozen mixture.

Swap the pineapple

How well each one fits the dish's main ingredients (sugar, gelatin):

  1. Vanillafits better
  2. Raisinfits better
  3. Figfits about as well
  4. Pineapplethe original

Fit is the average pairing score against sugar, gelatin. Candidates are from the same food group and used in at least 100 recipes.
