Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Sweetens the sherbet and, dissolved in boiled water, helps control ice crystal size.
Egg whites
Add foam and body, giving the frozen sherbet a lighter, smoother texture.
Pineapple
Provides the main fruit flavor, plus acidity and chopped pieces for texture.

The step that matters

Stir the mixture thoroughly before freezing. Stirring distributes the egg whites, juice and chopped fruit evenly so the sherbet freezes uniformly without separating into layers of syrup and fruit.
