Brown Almond Bar

Ingredients

Directions

Cook the nuts

  1. Combine sugar, cream of tartar, and water in a large pot and bring to a boil.

  2. Once boiling, add shelled and dusted almond nuts.

  3. Stir slowly, washing down the sides of the pot until the nuts are browned to your liking and slide off the spatula easily.

Set and cut

  1. Pour the mixture onto a flat surface between iron bars, about 1 inch thick.

  2. When cool enough to handle, cut into bars using a butcher knife and mallet.

What each ingredient does

Sugar
Forms the sweet, crisp candy matrix that holds the nuts together as it cools.
Cream of tartar
Adds acidity that helps keep the cooking sugar smooth instead of turning grainy.
Almond nuts
Make up the bulk of the bar, supplying crunch and nutty flavor as they toast in the syrup.

The step that matters

Stirring until browned to your liking. Sugar darkens quickly once the nuts are added. Pulling the mixture too early leaves it pale and soft, while cooking too long scorches the sugar, giving a bitter taste.

Swap the nuts

How well each one fits the dish's main ingredients (sugar, cream, almond):

  1. Pistachiofits better
  2. Cashew nutfits better
  3. Brazil nutfits better
  4. Nutsthe original

Fit is the average pairing score against sugar, cream, almond. Candidates are from the same food group and used in at least 100 recipes.
