Make the broth

  1. Place the shank of beef in a pot of cold water.

  1. Finely chop the celery and boil it in the soup until tender.

  2. Stir in the cream, and season with salt and pepper.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef shank
Gives the broth its meaty flavor as it simmers in water.
Flour
Thickens the broth so it has a fuller body.
Celery
Adds its vegetable flavor and tender texture to the soup.
Cream
Adds richness and a smooth, silky mouthfeel.

The step that matters

Thickening the broth with flour. Flour added directly to hot liquid clumps, so it should be mixed into a little cold water first. Starch then thickens evenly as the broth heats.

Swap the celery

How well each one fits the dish's main ingredients (beef, flour, cream, pepper):

  1. Nutmegfits better
  2. Turmericfits about as well
  3. Celerythe original
  4. Tarragonfits about as well

Fit is the average pairing score against beef, flour, cream, pepper. Candidates are from the same food group and used in at least 100 recipes.
