Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the sauce

  1. In a bowl, mix flour with a little cold milk until smooth.

  2. Add the flour mixture to the boiling milk and let it boil for 2 minutes.

  3. Remove from heat and stir in butter, beaten eggs, salt, and pepper. Beat well.

Assemble and bake

  1. Butter a baking dish and layer in minced salmon and sauce alternately until full.

  2. Top with a layer of cracker crumbs and bake at 400°F (200°C) for 15-20 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Thickens the milk into a smooth sauce that holds the layers together.
Eggs
Add richness and help the sauce set as the dish bakes.
Butter
Adds fat for a rich flavor and smooth texture in the sauce.
Minced salmon
Forms the main filling, providing flavor and a tender, flaky texture.

The step that matters

Add the flour mixture to the boiling milk. Flour must be smoothed in cold milk first and added to boiling milk while stirring, or it will clump instead of thickening into an even sauce.
