Sweetbread Pates

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the pastry

  1. Chop the butter into the chilled flour in a cold bowl using a knife.

  2. When the butter is in tiny bits, pour in the ice water and stir to form a dough.

  3. Transfer the dough to a cold board and roll it into a sheet ½ inch thick.

  4. Roll out the dough, double it up, and roll it out again; repeat this process three times.

Make the filling

  1. Cook together 1 tablespoon of butter and 1 tablespoon of flour until bubbling.

  2. Slowly add 1 cup of milk or cream while stirring constantly until boiling.

  3. Pour the hot mixture very slowly onto the beaten eggs while stirring.

  4. Return the mixture to the heat, add the sweetbreads, and cook briefly.

  5. Let the filling cool before filling the pastry shells.

Assemble and bake

  1. Grease the pate pans thoroughly and line them with the pastry.

  2. Bake in a 400°F (200°C) oven until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Stays in small pieces in the flour, creating flaky layers as the pastry bakes.
Flour
Forms the pastry structure and thickens the filling base with butter.
Eggs
Set when heated, giving the filling body and structure.
Milk or cream
Adds moisture and richness to the filling.
Sweetbreads
Provide the main filling ingredient, adding tender texture and rich flavor.

The step that matters

Pouring the hot mixture onto the eggs. Adding hot liquid to eggs too quickly can scramble them. Pouring slowly while stirring gradually warms the eggs so the filling stays smooth and thickens evenly.
