Raisin Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the filling

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, mix the chopped raisins, sugar, sweet cream, and salt.

Assemble and bake

  1. Place one pie crust in a pie dish.

  2. Pour the filling into the crust and cover with the second crust.

  3. Seal the edges and cut slits in the top crust.

  4. Bake for 30-35 minutes or until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Raisins
Provide the main sweetness and a chewy, moist texture in the filling.
Sugar
Adds sweetness and helps the top crust brown in the oven.
Sweet cream
Adds moisture and richness so the filling sets softly around the raisins.
Pie crusts
Form the base and top that enclose the filling while it bakes.

The step that matters

Sealing the edges and cutting slits. A tight seal keeps the juicy filling from leaking out, and slits let steam escape so the top does not puff up and split unevenly while baking.

Swap the raisin

How well each one fits the dish's main ingredients (sugar, cream):

  1. Vanillafits better
  2. Strawberryfits better
  3. Raspberryfits about as well
  4. Raisinthe original

Fit is the average pairing score against sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
