Moscow Cream

Ingredients

Directions

Prepare the jelly cups

  1. Make a plain lemon jelly and mold it in small cups.

  2. Once hardened, hollow the jelly cups with a hot spoon, leaving a ½ inch wall.

Make the cream filling

  1. Soak the gelatin in water.

  2. In a bowl, mix powdered sugar with sweet cream and tint with spinach coloring if desired.

  3. Whip the cream and add the gelatin when it is nearly stiffened.

  4. As it stiffens, add vanilla, almond flavoring, and chopped nuts.

  5. Pour the mixture into the jelly molds.

Fill and serve

  1. Melt the scooped-out jelly and use it to fill the cups.

  2. Serve with whipped cream flavored with vanilla and topped with chopped almonds.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the cream so it holds its shape when chilled and unmolded.
Sweet cream
Provides richness and a smooth, creamy body to the filling.
Powdered sugar
Sweetens the cream and dissolves easily into it.
Almonds or pistachio nuts
Add texture and a nutty crunch to the cream filling.

The step that matters

Adding the gelatin to the whipped cream. Gelatin must be added when the cream is only nearly stiffened. If it is added too early or too late, it may set unevenly or lumpily, or fail to hold the cream's airy structure once chilled.

Swap the spinach

The recipe marks spinach as optional. How well each one fits the dish's main ingredients (sugar, cream, vanilla, almond):

  1. Arrowrootfits better
  2. Sweet potatofits better
  3. Beetrootfits better
  4. Spinachthe original

Fit is the average pairing score against sugar, cream, vanilla, almond. Candidates are from the same food group and used in at least 100 recipes.
