Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the cake

  1. Preheat the oven to 350°F (175°C).

  2. Cream together the sugar and butter until light and fluffy.

  3. Add the sweet milk, flour, cornstarch, and mix well.

  4. Fold in the beaten egg whites, cream of tartar, and baking soda dissolved in the milk.

  5. Pour the batter into prepared cake pans and bake until golden.

Make the filling and assemble

  1. For the filling, beat the egg whites and yolks together lightly.

  2. Add 1½ cups of sugar, then mix in the chopped almonds and vanilla.

  3. Spread the filling between the layers of the cooled cake.

What each ingredient does

Butter
Creams with the sugar to trap air, giving the cake a light, tender crumb and rich flavour.
Egg whites
Beaten to foam, they lift the batter and give the cake its airy structure.
Cream of tartar
Stabilises the beaten egg whites and helps them hold their volume in the batter.
Baking soda
Reacts with the acidity in the batter to produce gas, helping the cake rise and brown.
Almonds
Add body, moisture and nutty flavour to the filling.

The step that matters

Folding in the beaten egg whites. Overmixing or stirring vigorously deflates the whipped egg whites, losing the air that makes the cake light. Fold gently so the batter keeps its rise.
