To Preserve Peaches

Ingredients

Directions

Prepare the peaches

  1. Cut peaches in half, remove stones, and peel them.

Make the syrup

  1. For each pound of sugar, add 1 teacup of water and stir until dissolved.

  2. Heat the syrup over moderate heat until boiling.

Cook the peaches

  1. Add peaches to the boiling syrup and boil gently until they are clear and uniform in color.

  2. Carefully turn the peaches with a skimmer several times.

  3. Once clear, remove each peach half with a spoon and spread them on flat dishes to cool.

  4. Boil the syrup until it thickens, then pour it into a large pitcher to cool and settle.

  5. Optionally, add some peach kernels while boiling.

Jar and cover

  1. Once peaches are cold, place them in jars and pour the syrup over them, leaving any sediment behind or strain the syrup.

  2. Let the jars sit open overnight, then cover.

What each ingredient does

White sugar
Forms the syrup that preserves the peaches and keeps them sweet and firm.
Peaches
Provide the fruit, which turns clear and tender as it cooks in the syrup.
Water
Dissolves the sugar so it can form an even syrup for cooking the fruit.

The step that matters

Cooking the peaches gently in the boiling syrup. Boiling too hard can break the peach halves apart and cloud the syrup. Gentle cooking lets sugar slowly penetrate the fruit so it becomes clear and holds its shape.
