Sweet Pickles

Ingredients

Directions

Prepare the syrup

  1. Weigh the fruit and measure out the same weight in sugar.

  2. Make a syrup by cooking the fruit in the sugar until tender.

Pack and finish

  1. Place the cooked fruit in jars with spices.

  2. For each gallon of fruit, add 1 pint of vinegar to the syrup and boil until it reaches the right consistency.

  3. Pour the syrup over the fruit without cooking the spices to keep the fruit from turning dark.

What each ingredient does

Fruit
Forms the bulk and soft, tender texture of the pickle.
Sugar
Sweetens the pickle and, with the fruit, builds the thick syrup.
Good vinegar
Adds sharp acidity that balances the sweetness and helps preserve the fruit.

The step that matters

Pour the syrup over the fruit without cooking the spices. Heating spices in the syrup can darken the fruit and make the flavor harsher. Keeping the spices out of the boil and adding the syrup over them protects the fruit's color and keeps the flavor clean.
