Directions

Make the fudge

  1. Mix the brown sugar, white sugar, milk, and butter thoroughly in a pot.

  2. Place the pot on the stove and bring to a boil for several minutes.

  3. Add the grated chocolate to the pot.

  4. Test the mixture by dropping a small amount into cold water.

  5. When the mixture is barely stiff enough to be molded with fingers, add the flavoring.

  6. Remove from heat and beat until it begins to harden.

Set and cut

  1. Pour quickly into a large buttered pan and let it stand before cutting.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Light brown sugar
Adds sweetness and a molasses-like depth to the fudge.
White sugar
Provides sweetness and helps form the fine sugar crystals that set the fudge.
Rich milk
Supplies moisture and milk solids that give the fudge a creamy, soft texture.
Butter
Adds fat for a smooth, tender texture and richer flavor.
Baker's chocolate
Provides the chocolate flavor and firmness once melted into the mixture.

The step that matters

Testing the mixture in cold water. Sugar syrup must reach the right concentration before beating. Cooking too little leaves the fudge soft and runny, while cooking too long makes it hard and grainy. The cold-water test shows when it is ready.
