What each ingredient does

Flaxseed
Releases a slippery mucilage into the water, giving the tea body and a thick, soft texture.
Lemon juice
Adds acidity that brightens the flavor and balances the sweetness.

The step that matters

Boiling and standing the flaxseed. Boiling and then resting the seeds in hot water gives the mucilage time to dissolve into the liquid. Cutting this short leaves the tea thin, so the full 30-minute boil and 20-minute rest matter.
