Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweetbread
Main protein; gentle simmering in stock keeps it tender and moist.
Flour
Thickens the butter into a white sauce that binds the filling.
Butter
Enriches the sweetbread and forms the base of the white sauce.
Cream
Adds richness and smoothness to the sauce, softening its texture.
Button mushrooms
Add earthy flavour and a tender bite to the filling.

The step that matters

Simmer the sweetbread gently until tender. Sweetbreads are delicate; a hard boil toughens the proteins and makes them rubbery, so a gentle simmer keeps them tender and moist.
