Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Halve the cabbage and remove the stalk.

  2. Wash the cabbage carefully and soak it in salted water for 1 hour.

  3. Fill the cavity with a mixture of sausage meat and breadcrumbs, seasoned to taste.

  4. Place the cabbage halves together and tie them with string.

Cook and serve

  1. Cook on the stovetop for 15 minutes.

  2. Transfer to a 350°F (175°C) oven and bake for another 15 minutes.

  3. Remove the string.

  4. Serve with demi‑glaze poured around.

What each ingredient does

Cabbage
Forms the outer wrapper that holds the filling and becomes tender as it cooks.
Sausage meat
Adds fat and savoury flavour, and its juices moisten the breadcrumb filling.
Breadcrumbs
Soak up fat and juices, giving the filling a softer, moister texture.
Stock
Provides liquid for gentle simmering, keeping the cabbage moist and adding savoury flavour.

The step that matters

Tie the halves firmly before cooking. If the cabbage halves are not tied securely, the filling can escape and the leaves may separate during cooking, so the parcel holds its shape only when fastened well.
